Simple Fried Red/Green Tomatoes with 

Sour Cream & Prosciutto Ham

1/2 cup white flour 3 eggs, beaten
2/3 cup Panko ( Japanese sweet) bread crumbs
3 firm ripe tomatoes, not soft
1/4 cup olive oil
2 teaspoons of butter
1/2 teaspoon salt
1/4 teaspoon pepper

GARNISH (Your call) 
A generous portion of sour cream
3 slices Prosciutto, or Hormel bacon fried till crisp
Chives, finely chopped
Parmigiano Reggiano


Cut tomatoes into ½ inch slices and sprinkle with coarse salt & cracked black pepper.
Place flour, eggs, and crumbs in separate shallow dredge 
Heat oil with butter in a medium size skillet on medium heat.
Dip tomato slices in flour, then eggs, then crumbs.
In the pan, fry half the coated slices at a time for about 3 to 4 minutes per side or until golden brown.
Remove to a serving tray.
Garnish with a generous portion of sour cream, crumbled crisp prosciutto or bacon bits and a sprinkle of minced, fresh chives and /or Parmigiano Reggiano cheese
